Vegan Burrito Bowl Recipe

As a vegetarian or vegan it is important to find ways to get your protein! And this recipe is perfect for that. In fact, this is my go-to post workout recipe of the moment… And it’s delicious.  Serve this up at anytime for anyone and they will love it!

This recipe also follows one of the key things I always shoot for in a recipe – there’s no way to mess it up. The burrito bowl can include anything you want. I’m going to share with you the ingredients I use, but you can throw in whatever you want! The instructions are also pretty simple… throw everything in a bowl and stir.

I typically serve this dish up with a plate of vegetables (I typically go for carrots and broccoli) and dip those veggies into the delicious burrito mixture.  You don’t have to do that though, the recipe is great eaten alone as well!


Here’s the ingredients I used:

  • 1/2 cup cooked quinoa
  • Black beans
  • Edamame
  • Diced tomatoes
  • Trader Joe’s Red Pepper Spread

These would be good additions:

  • Fresh salsa
  • Avocado
  • Other beans: garbonzo, kidney, etc
  • Brown rice
  • Broccoli
  • Zucchini
