Continuing on with my fall pumpkin recipe series – here is a delicious, healthy, and easy pumpkin cookie recipe for you. This cookie is one everyone will enjoy (unless they are allergic to nuts). This cookie is grain free and 100% vegan. I structured the recipe so it would make about 6 cookies, because I don’t need lots of cookies sitting around (especially ones that are this tasty). You can double or triple the recipe based on your needs!
Ingredients:
1/2 cup almond butter (organic)
1/4 cup pumpkin puree
1/8 cup maple syrup
1/2 tsp vanilla
pumpkin spices (to taste)
pinch of salt
Instructions:
- Preheat oven to 350 degrees (F) and lightly spray or coat your cookie sheet with nonstick cooking spray or oil
- Combine all ingredients in a bowl and mix until batter is formed
(At this point I tasted the batter to see what spices I needed to add more of) - Scoop out batter with a spoon and put on your cookie sheet
- Bake at 350 for 12 minutes
- Enjoy!
