Vegan & Grain-Free Pumpkin Cookie

Continuing on with my fall pumpkin recipe series – here is a delicious, healthy, and easy pumpkin cookie recipe for you.  This cookie is one everyone will enjoy (unless they are allergic to nuts).  This cookie is grain free and 100% vegan. I structured the recipe so it would make about 6 cookies, because I don’t need lots of cookies sitting around (especially ones that are this tasty). You can double or triple the recipe based on your needs!


Ingredients:

1/2 cup almond butter (organic)

1/4 cup pumpkin puree

1/8 cup maple syrup

1/2 tsp vanilla

pumpkin spices (to taste)

pinch of salt

Instructions:

  1. Preheat oven to 350 degrees (F) and lightly spray or coat your cookie sheet with nonstick cooking spray or oil
  2. Combine all ingredients in a bowl and mix until batter is formed
    (At this point I tasted the batter to see what spices I needed to add more of)
  3. Scoop out batter with a spoon and put on your cookie sheet
  4. Bake at 350 for 12 minutes
  5. Enjoy!
